500 grams (1 pound) lamb mince
1 stalk rosemary, leaves finely chopped
1 red onion, finely diced
1/2 cup Greek yoghurt
1/4 cup cucumber, deseeded and diced
2 tablespoons mint, finely sliced
2 tablespoons lemon juice
2 heads baby gem lettuce
2 vine tomatoes, sliced thinly
1 bell pepper, diced
1 red onion, finely sliced
For the burgers, combine mince, rosemary and diced onion and form into 125 gram (4.5 ounce) patties. Season with salt and pepper, and grill to pink all the way through.
For the Tzatziki, combine yoghurt, cucumber, mint and lemon juice in a small bowl.
To assemble, separate the baby gem lettuce into nice whole leaves, place the burger on the lettuce leaf, cover with the Tzatziki sauce and garnish with tomatoes, bell peppers and red onion. Place second lettuce leaf on top to make a burger.
